The Context:
Culinary delights from the Northern Frontier
From Punjab to Peshawar, India’s erstwhile Northern Frontier has always been home to rich tradition, vibrant culture and diverse cuisine. Throughout the course of history, this region has seen unparalleled shifts that have shaped not only the stories of the families that resided within but also their homegrown recipes. At Rozana, we honour both. Rozana was born with the intention to pay homage to the legacy of the old North through the medium of food.

Our team, led by the passion of chef Neeraj Tyagi, took a special journey to collect culinary tales from the homes and the streets of the North. Nostalgia and a deep sense of care came together to curate our menu that stays true to the kitchens of the Northern Frontier, using only the most authentic ingredients and preparation methods.

Every dish is made with heart, and each bite tells a story that brims with soul. Our signature cocktails have been expertly crafted by world-renowned mixologists, layering your dining experience with the true spirit of India.
The Chef's note
A deep passion for the rich culinary traditions of India's former Northern Frontier, coupled with warm childhood memories of this cuisine, served as the inspiration that celebrity chef, Neeraj Tyagi, tapped into for our menu. Chef Tyagi's culinary creations pay homage to the street hawkers and home chefs of the old North and are based on authentic produce, spices and recipes.

Rozana's menu features six traditional cooking styles, including Angar (smoked), Dungar (charred), Dum (sealed), Sigdi (charcoal) and Pressure (homestyle). From the delicious kadai-made dishes of the Afghan-travelled Shinwari cuisine to the progressive chaat combos from New Delhi, Chef Tyagi infuses the rustic heritage of the region with his innovative culinary methods. Having been personally sourced from his travels to the North and beyond, our menu holds deep personal significance for Chef Tyagi. This is reflected in each of his preparations, which are produce-focussed, plated to perfection and possess the power to evoke cherished memories while helping you create new ones.At Rozana, you can experience the love, lore and legacy behind each dish.
