A deep passion for the rich culinary traditions of India's former Northern Frontier, coupled with warm childhood memories of this cuisine, served as the inspiration that celebrity chef, Neeraj Tyagi, tapped into for our menu. Chef Tyagi's culinary creations pay homage to the street hawkers and home chefs of the old North and are based on authentic produce, spices and recipes.
Rozana's menu features six traditional cooking styles, including Angar (smoked), Dungar (charred), Dum (sealed), Sigdi (charcoal) and Pressure (homestyle). From the delicious kadai-made dishes of the Afghan-travelled Shinwari cuisine to the progressive chaat combos from New Delhi, Chef Tyagi infuses the rustic heritage of the region with his innovative culinary methods. Having been personally sourced from his travels to the North and beyond, our menu holds deep personal significance for Chef Tyagi.
